EILEEN’S CRANBERRY SAUCE:
1 cup of water
1 cup sugar
2 cups fresh cranberries
1 orange, peeled and diced
1 tablespoon orange zest
1/8 cup Grand Marnier (optional)
INSTRUCTIONS:
Mix sugar and water in a medium sauce pan.
Bring to a boil and stir to dissolve sugar. (Leave pot uncovered.)
Add cranberries and bring to a boil; then reduce the heat and gently boil for ten minutes, stirring occasionally.
Remove from heat.
Cool to room temperature.
Add diced orange and zest and Grand Marnier.
Refrigerate.
Makes approx. 2 cups of cranberry sauce. In general, if used as a condiment, it will serve about 4 people.
Cranberries were harvested by the New Jersey Indians. (Lenni Lenape and Delaware tribes). Despite the illustration above, we don’t believe that there were buffalo in Ocean Grove.
Cranberries are an important crop in New Jersey, grown in the bogs of the the Pine Barrens. Every October there is a Cranberry Festival in Chatsworth, NJ. Thousands of people come. We usually go and come home with 7 pounds. Eileen makes her cranberry sauce in time for Thanksgiving, but she freezes the cooked remainder and uses them year round. Wegmans sells fresh cranberries.
