This portrait was taken at Waffle House #314 in Weldon, North Carolina. Eileen ordered her eggs well done, and the waitress called out to the chef, “Eggs whale.”
As she was making change, I made this photo. I said, “..took your picture.”
She said, “Thank you.”

We stayed near a Waffle House during a recent visit to Disney, passed it many times during the week (and a few others too) so eventually went in and tried the fare – not bad. We ordered grits and scrapple to try to get the full experience.
Anyway, not long after I read that the Waffle Houses have a great reputation for staying open during bad storms with generators and emergency procedures. So much so that FEMA apparently has an informal Waffle House Index that they use to talk about storms – green is full menu, yellow is limited menu and red is closed. According to one FEMA official, “if you get to a storm area and the Waffle House is closed – that’s really bad.”
