The star of the show is the brisket (pot roast.) Eileen usually gets hers at Wegmans, but Costco always has it for the “high holidays.
But not everyone will eat meat, so she has to make a chicken also. She buys her chickens at Wegmans where they have tasty organic Bell and Evans chickens. In the photo we can see her seasoning the chicken. You will notice the Bell’s seasoning which has been made for over 150 years in the US. She also uses paprika, but don’t rub it in (pun alert!) and also ground black pepper and also ground garlic. It cooks for about 70 minutes.
I like the giblets: organs that come along: gizzard, liver, and heart. Eileen puts them aside for me. I learned to like them from my mother’s family, who came over from Poland around the turn of the last century. Eileen likes the tush. Everyone knows to save that for her.
Other items that she serves includes the round challah bread, chopped chicken livers, vegetarian stuffing (a family specialty on her side,) cranberry sauce, hummus. (a spread made with chick peas and seasonings), roast potatoes green beans, babka, rugelach and cookies. Babka is a sweet cake brought over from Eastern Europe by the Jews of the diaspora. Rugelah are small pastries with different fillings.
